We started experimenting with different craft yeast and the results exceeded expectations. With this rich spirit we filled heavily charred 10L and 20L South Australian brandy barrels at 64% abv. Halfway through maturation the spirit was reduced to 58% and married together in ‘Eirene’ a 2nd fill 100L ex Pinot Noir French oak barrel.
