Sidewood Estate Sparkling NV is produced by Sidewood Estate in the Adelaide Hills, Australia. Crafted from 60% Pinot Noir and 40% Chardonnay, the fruit is hand-picked and gently pressed using only free-run juice. Wild fermentation in stainless steel is followed by extended lees ageing and secondary fermentation using the Charmat method, creating freshness, texture and complexity.

The appearance is pale straw with bright highlights and a lively, fine bead.

The nose is lifted and expressive, showing fresh strawberry and lemon citrus with subtle biscotti notes.

The palate is elegant and well integrated, revealing strawberry, nectarine and cashew with a creamy texture developed through lees ageing. Bright natural acidity provides freshness and structure, leading to lingering citrus and nougat notes.
