Williams & Humbert Don Zoilo Pedro Ximénez 15 Year Old is an intensely rich sweet Sherry from Bodegas Williams & Humbert in Jerez, Spain. Produced entirely from Pedro Ximénez grapes sourced from Jerez Superior, the grapes are sun-dried to concentrate their natural sugars before pressing and fortification. The wine is then matured oxidatively through the traditional Criaderas y Solera system for a minimum average age of 15 years, developing remarkable concentration, complexity and depth.

Deep mahogany-black in appearance, with exceptional density and dark brown highlights.

The nose is powerful and concentrated, dominated by raisins and dried figs, with layers of dried plum, dates, sweet spice and roasted coffee. Further nuances of dark chocolate, molasses and mature oxidative character add richness and complexity.

The palate is intensely sweet, rich and velvety, with concentrated flavours of raisins, figs and dried fruits filling the mouth. Low acidity contributes to its luscious texture, while notes of dark chocolate, coffee, treacle and sweet spice provide complexity beneath the powerful fruit. Despite its considerable sweetness and concentration, extended oxidative maturation gives the wine depth and persistence.
